Malabar Beef & Mutton Biryani.

Short-grain rice. Slow-cooked meat in our family masala. Layered with fried onion, saffron-milk, ghee and mint. Sealed under dough and steamed for forty-five minutes — opened, slowly, at your table. The version that has lived on the menu since 2009.

Masala Quail, Mix Grill.

Quail marinated overnight in yoghurt, lemon and ten spices. Open coal, lemon-half pressed live at the table. The mix grill platter pairs it with chicken tikka, sheesh kebab, lamb chop and a kebab kofta — meant for two, finished by four.
